Toasted Marshmallow Cake Topping

This is a really simple and fun way to dress a chocolate cake – it looks really great on a kugelhopf-style ring cake, but would look good on cupcakes too.

There are a number of ways to toast the marshmallows – I used the one by one over the fire method – using our stove top gas burners and stringing the marshmallows onto satay sticks. Another, faster way would be to pop them on a paper-lined baking tray in an oven til they’re toasty, or even put the whole cake with the marshmallows on top straight in the oven… although this could cook the cake a bit too much.

I used the new Pascall Mega-Mallows – they’re the perfect size – and very wide… oh and delicious too.

I then sprinkled it with dark chocolate to finish it off.

You can prepare it hours before hand, but I’d recommend eating it hot – toasted marshmallows are to die for!
