Pomegranate Chickpea Salad
The salad took 5 minutes to make – and was packed with flavour and most importantly – texture. The pomegranate arils explode and crunch in your mouth!
Ingredients
Can of chickpeas
1/2 pomegranate, seeded (use the rest in the dessert for the meal!
)
Cherry tomatoes – heirloom ones if you can find them AND if you want to look a little wanky
juice 1/2 lemon
slurp of good olive oil
big bunch of chopped flat leaf parsley
salt and pepper
Toss it all together and serve. We served ours with a mix of different foods – this is quite often how we eat – with no real theme – just lots of yummy food!
That bacon there is BOAR bacon! It was particularly delicious.

will make this for dinner tonight to have with steak. looks soooo good!
